I LOVE having the opportunity to host giveaways on this blog! The folks at Hongar Farms in Georgia contacted me to see if we’d like to try out some Benissimo Gourmet Oils for cooking. They generously sent us two bottles of their gourmet oils: Mediterranean Garlic and Lemon Pepper.
You guys, aren’t these bottles GORGEOUS!? I completely understand now when Hongar Farms say that the Benissimo oils “Taste as good as it looks”.
Marci from Hongar Farms thought the Lemon Pepper oil would be a fantastic compliment to our Packs a Punch Kale Salad and I agree! However, our kale plants in our garden aren’t quite ready for their salad debut, so I thought I’d whip up a new “recipe”.
Bean and Cucumber Salad with Benissimo Oils
- 2 cans Beans, rinsed and drained (I used a can of pinto beans and a can of red kidney beans)
- 1 English Cucumber, diced
- 1/2 Red Onion, finely diced
- 2T fresh herbs (I used parsley)
- 2T Benissimo Gourmet Oil (I used 1T Mediterranean Garlic and 1T Lemon Pepper)
- Salt & Pepper to taste
Combine everything in a bowl and season to taste. That’s barely a recipe (more like throwing things together in a bowl), but it was DELICIOUS!
I tossed in some cooked gluten-free noodles and a bit more Mediterranean Garlic oil to make a delicious bean and pasta salad for a hot summer day! Adeline LOVED this (what kid doesn’t love noodles?!)
And, just in case you weren’t convinced that these oils are delicious, try a piece of toasted bread (Udi’s for me) dipped in the Mediterranean with a pinch of salt. YUM.
